Simple Granola

Ingredients

2c oats

1/4 c chopped almonds

1/4 c dried cranberries

1/4 c pumpkin seeds

1/4 c sunflower seeds

2 scoops protein powder (any protein powder works- optional)


1/3 c honey or maple syrup

1/4 c coconut oil (melted)

1 tsp vanilla extract


*Can substitute any of your favorite nuts or dried fruits for any of the ingredients

*For an oil-free version you can replace the coconut oil with unsweetened applesauce but you will have to increase the cooking time. This will also result in softer granola rather than a more crunchy version.

Preparation

  1. Preheat oven to 350F or 180C

  2. Add in the oats, nuts of choice, protein powder (if using), and dried fruit in a bowl and mix until evenly mixed 

  3. Add in the coconut oil and honey and mix until the mixture is evenly coated

  4. Spread evenly onto a greased baking tray. For more chunky granola press the granola down to be more compact.

  5. Bake for 16-18mins or until golden brown. Make sure that it is not too dark or else the granola will taste burnt

  6. Take out and cool fully before transferring into an airtight container.

This lasts 2-3 weeks and can be added to your favorite yogurt or as your next bowl of cereal.
